This week’s challenge is Vegan Week! I know, it sounds intimidating, but I promise it’s easier than you think, and I even have 4 easy recipes to share to get you started at breakfast all the way through to dessert. These are also easy to meal prep with to set this week up for success.
Breakfast: Fluffy Pancakes with Fruit and Maple Syrup

Veganism is effectively one of the best ways to reduce your carbon footprint and lead into healthier lifestyle habits. Factory farming is one of the largest polluting industries from excrement run-off into waterways causing toxic algae blooms to the animals living in horrendous conditions as well as the massive amounts of land used. Veganism is known to help reduce cholesterol, blood pressure and risk of certain cancers, while there is no shortage of vegan junk-food available now, opting for fresh (organic when able) produce more often will have a positive impact on your health.
